Cheesy Chilli Oil Pasta

“This dish is the ultimate ‘satisfy your cravings’ meal, with the creamy cheesy sauce and just the right amount of spice, ready in only 15 minutes using some of my tasty premium pasta from Yorkshire Pasta


  • 1 shallot

  • 1 tbsp butter

  • 1 clove garlic

  • 2 tbsp chilli crisp oil/chilli oil (the taste will depend on the one you buy but I recommend one with garlic chilli and a little sweetness)

  • 1 ladle pasta water

  • 200g pasta

  • 75ml double cream

  • Handful fresh coriander (saving some for topping

  • 30g grated mozzarella

  • Salt and black pepper

Step by Step Instructions

Step 1

Bring a pot of hot water to the boil and begin cooking your pasta

Step 2

Meanwhile, to a medium heat add the butter until melted then begin frying the shallot

Step 3

Fry the shallot for 3-4 minutes then add the garlic and fry for a further minute

Step 4

Add in the 2 tbsp chilli oil and stir then add the double cream

Step 5

Stir until combined then add the pasta water, simmer until the pasta is ready and the sauce has thickened slightly

Step 6

Once the pasta is ready add it to the sauce and stir to combine, add in the coriander and cheese then stir until it’s stringy and melty

Step 7

Serve topped with a little more chilli oil and coriander
