Creamy Tarragon Yorkshire Pasta

This pasta dish is such a hit with our family! It’s soooo delicious, made even more so by the amazing Fusilli pasta gifted from The Yorkshire Pasta Company @yorkshirepasta
Hand on heart this pasta is so good! I would highly recommend anyone buying it who’s looking for a dried pasta that tastes freshly made, and even better it’s made in Yorkshire

Ingredients

  • 200g of Fusilli Yorkshire Pasta 
  • 3 mini Courgette’s or 1 full size
  • 6 mushrooms
  • Half an onion
  • 1 clove garlic
  • 1 red chilli (seeds removed)
  • 2 tbsp of Cream Cheese
  • 1 tsp of Dijon mustard
  • Tarragon (fresh or dried)
  • 1 ladle of pasta water
  • Grated Parmesan

Step by Step Instructions

Step 1

Add Pasta to a pot of salted boiling water

Step 2

Cut courgettes, onion and mushrooms into similar size chunks

Step 3

Fry on a medium heat for 5 minutes adding in the finely sliced garlic and chilli halfway through

Step 4

Lower the heat of the frying pan, add in the Cream Cheese and stir in the vegetables

Step 5

Add in the mustard, tarragon and stir

Step 6

Add in a ladle of the pasta water to thin out the sauce 

Step 7

Season with salt and pepper to taste

Step 8

Drain the pasta and stir into the sauce

Step 9

Top with Parmesan
