Deli Style Vegetables with Pasta


  • 80g pasta (Tortiglioni)
  • 1/2 red onion or any onion, finely sliced
  • 160g of deli style vegetables – I used leftover olives, marinated artichokes and sun-dried tomatoes, chopped up
  • 80g spinach or greens
  • 1 clove of garlic
  • 1/2 tsp chilli flakes
  • Basil if you have it
  • 1 tbsp olive oil

Step by Step Instructions

Step 1

Toast your pine nuts in a dry pan until lightly coloured and set aside in a bowl.

Step 2

Meanwhile, heat the remaining olive oil in a pan and when hot, add the sliced onion and sauté for 5 – 6 min over a medium heat.

Step 3

Add the garlic and chillies and sauté for another minute.

Step 4

Add all the deli vegetables and sauté for another minute.

Step 5

Add the spinach or greens and cook until wilted.

Step 6

Add the cooked pasta. Season with salt and pepper, add basil if using.

Step 7

Add a sprinkle of grated cheese and enjoy!
