Ingredients
- 35g Nduja
- 2 Garlic cloves
- 125ml white wine
- 400g tinned tomatoes, crushed
- Salt to taste
- Sugar to taste
- 300g Mezze Maniche Rigate Yorkshire Pasta
- 200g prawns
- Squeeze of lemon juice
- Handful parsley
- Parmesan to serve (optional)
Step by Step Instructions
Step 1
Add a splash of good oil to a large frying pan, tear up your nduja and fry off.
Step 2
Crush your garlic and add into the pan to fry for a couple of minutes, then add your wine.
Step 3
Keep on a high simmer and add in your tomatoes, season everything with salt and sugar to taste.
Step 4
Cook your Yorkshire Pasta to pack instructions in a pan of seasoned water.
Step 5
Add your prawns in to the simmering tomatoes.
Step 6
Squeeze in your lemon juice and add half a cupful of pasta water.
Step 7
Once your prawns are cooked add in your cooked pasta and a handful of chopped parsley. Stir to coat and leave simmering for 1-2 minutes. Then serve with a flurry of parmesan.
