Ingredients
350g of dried pasta
5 tbsps of pesto
100ml of single cream
100ml of white wine
2 garlic cloves
Salt and black pepper to taste
Parmesan
Pancetta
A handful of frozen peas
A handful of spinach
Step by Step Instructions
Step 1
Fry your pancetta and chopped up garlic in a pan with olive oil until brown.
Step 2
Add your pasta to hot salty boiling water to cook.
Step 3
Whilst your pasta is cooking, add the white wine and peas to the sauce pan and let it simmer for 10 minutes.
Step 4
Add a few tbsps of the pasta water to your sauce pan, together with the pesto and cream. And, add the spinach.
Step 5
Let it cook for a few minutes. Do a quick taster test to make sure the alcohol from the wine has evaporated. If it’s too “winey” let the sauce cook for a little longer. If it needs a little something something, add more pesto or add a little bit of chicken or vegetable stock cube for extra flavour.
Step 6
Once the sauce is ready, add the pasta to the sauce with plenty parmesan and black pepper!
