Smoked Salmon and Avocado Pasta

 Serves 2.


  • 2 medium sized avocados
  • Glug of olive oil
  • 145g Pasta (Tortiglioni)
  • The zest and juice of half a lemon
  • Handful of nuts (I used walnuts)
  • Salt and pepper to taste
  • 1 garlic clove
  • A couple of basil leaves
  • Around a tablespoon of Parmesan cheese if you have it – optional as tastes just as good without
  • 50g of smoked salmon


Step by Step Instructions

Step 1

Cook pasta as per packet instructions

Step 2

Blend all ingredients (minus the salmon and pasta) in a blender

Step 3

Stir through cooked pasta, adding a little pasta water if too thick, then add small strips of smoked salmon and stir those through too.

Step 4

Finish with a squeeze of lemon / some red pepper flakes and you’re good to go. You could also add some cherry tomatoes / whatever other veg you have lying around for even more goodness!
