Ingredients
- 1 medium aubergine, skin on and diced
- Olive oil
- 2 cloves garlic, minced
- 400g tinned tomatoes (blended)
- Large bunch of fresh basil
- 1 lemon, juice
- Salt
- Sugar
- 300g Yorkshire Pasta Tortiglioni
- Parmesan to serve
Step by Step Instructions
Step 1
Fry your aubergine in oil and then set aside.
Step 2
Fry off your garlic over a medium heat for 1-2 minutes before adding your tomato.
Step 3
Add salt and sugar to season, lemon juice, and the bunch of basil.
Step 4
Cook your Yorkshire Pasta to pack instructions in a pan of seasoned water.
Step 5
Add the aubergine into your tomato sauce and remove the basil, leave on a low simmer.
Step 6
Add the cooked pasta and 1/2 cup of pasta water, stir to coat and simmer for 1-2 minutes.
Step 7
Serve and top with thin slices of parmesan and some fresh basil.
