“This Pasta ‘alforno’ was made using wonderful ingredients which originates loosely around Arrabbiata ‘meaning – angry. The word “arrabiata” means “angry” in Italian. The sauce can leave some susceptible savorers ‘red in the face’.”

Ingredients

  • 2 mixed chillis

  • 2 Garlic Cloves

  • 1 aubergine

  • Penne Pasta – Yorkshire Pasta Company

  • 1 tin of chopped tomatoes

Step by Step Instructions

Step 1

Prep your ingredient, de-seed your chilli’s and chop them roughly in half, finely chip your garlic, roughly chop your aubergine into bite size chunks

Step 2

Into the pan with a generous drizzle of olive oil and add your garlic and chilli and cook until fragrant add your aubergine and sweat until softened season with salt and pepper, into the pan go with 1 tin of peeled plum tomatoes and one tin of water

Step 3

Bring to the boil and reduce heat and cook until 50% of it has reduced.

Step 4

Cook your Yorkshire Pasta per packet instructions

Step 5

Preheat your oven to 180° add all together in your baking tray with a helping of Parmigiano over the top and bake for 20 minutes
