Quick & Easy Sausage Pasta


  • 200g Pasta (Mezze Maniche Rigata)
  • 3 leftover BBQ sausages or oven cooked
  • 1/2 an onion, finely sliced
  • 1/3 of a large courgette, quartered and sliced
  • 300ml passata
  • Mozzarella
  • Chilli flakes
  • Basil

Step by Step Instructions

Step 1

Get your water boiling, salted and add your pasta – cook as per instructions

Step 2

While the pasta is cooking, add a good glug of olive oil to your pan, on a low heat add the onions and courgettes, season with a little salt, add some chilli flakes to your taste and allow to cook for ten minutes, stirring occasionally and being sure not to burn your onions

Step 3

Add the passata and combine and allow to gently simmer, season with some black pepper

Step 4

Slice up your sausages and add to the sauce

Step 5

Add your pasta with a splash of pasta water and combine

Step 6

Top with sliced or torn mozzarella and pop a lid on for a minute or two with the heat on to allow it to melt slightly

Step 7

Decorate with fresh basil and serve
