Ingredients
- 1/2 Large Red Onion
- 4 Garlic Cloves
- 1 Carrot
- 200g Mushrooms
- 1 Courgette
- 500g Turkey
- Basil Leaves
- 1 Tin of Tomatoes
- 300g Pasta (Mezze Maniche Rigate)
- Splash of Red Wine
- 80g Parmesan
- 1 Tbsp Balsamic Vinegar
- 1 Tbsp Garlic Powder (I love garlic)
- 1 Tsp Honey
- 1 Tbsp Olive Oil
- Salt
- Pepper
Step by Step Instructions
Step 1
Finely dice the vegetables
Step 2
Add olive oil to pan and sauté the onion and carrot. Season with salt, pepper and garlic powder on a med-low heat for 5 mins, then add the mushrooms, garlic and courgette. Fry for another 5 mins.
Step 3
Add Turkey mince and brown.
Step 4
Deglaze with a splash of red wine.
Step 5
Pour in tomatoes and reduce.
Step 6
Add balsamic vinegar, honey, salt and pepper to taste.
Step 7
Stir in the pasta with some pasta water.
Step 8
Grate in some parmesan.
Step 9
Plate up and add basil leaves on top.
